Ingredients:3 medium, ripe Avacados 2 Tblsp. lemon juice 1/2 tsp salt 1/4 tsp pepper 1 c. sour cream 1/2 c. mayonnaise or salad dressing 1 pkg. taco seasoning mix 2 cans plain or jalapeno bean dip 1 bunch green onions w/tops, chopped 2 (3-1/2 oz) cans pitted ripe olives 1 (8 oz) pkg sharp Cheddar, shredded
Instructions:Peel, pit and mash avacado in a medium size bowl with lemon juice, salt and pep- per. In a separate bowl, combine sour cream, mayonnaise, and taco seasoning mix. TO ASSEMBLE: spread bean dip on a large shallow serving platter; top with seasoned avocado mixture; layer with sour cream-taco mixture. Sprinkle with chopped onions, tomatoes and olives: cover with shredded cheese. Serve chilled or room temp with round tortilla chips.
