Ingredients:2 medium potatoes peeled and diced 2 cups cooked, chopped chicken 1 cup diced celery 1 jar sliced mushrooms 1 cup frozen peas and carrots 1/4 cup flour 1/4 cup chopped green pepper 1/4 cup fat 2 pie crust rounds 2 cups chicken broth and/or water
Instructions:Cook potatoes, celery, peas and carrots 'til tender. Meanwhile make a white sauce with flour and fat. Stir in broth and stir and cook to make a thin gravy. Line a 10-inch pie plate with one pastry round. Combine chicken, mushrooms, vegetables, and gravy and pour into pastry-lined pie plate. Top with remaining pastry round, crimp, and cut vents to allow steam to escape. Bake at 375ø for about 45 minutes, until gravy is bubbling and crust is golden. Cool slightly and serve. Serves 6 to 8.
