Ingredients:1 pk Yellow or pineapple cake mix
3/4 c Oil
1 pk (4 serving) pineapple or
Vanilla INSTANT pudding mix
4 Eggs
10 oz. 7-UP
Topping:
3 eggs
1-1/2 c. sugar
1 T. flour
1 stick butter
1 small can coconut
1 cup undrained crushed pineapple
Instructions:Mix cake mix, pudding mix, eggs and oil. Add 10 oz. 7-UP. Pour into 9 x 13 pan. Bake at 350° about 40 minutes. TOPPING: Combine eggs, sugar, flour and butter in a saucepan. Cook over medium heat until thick. Stir in coconut and undrained crushed pineapple. Pour over HOT cake. Refrigerate any leftovers. Source: Sue J. Hall
